albarragena ham selfridges Sefridges Start Selling Worlds Most Expensive HamThe sale of the most expensive ham in the world, Albarragena ham, so lucrative a joint of meat that it comes certified with a DNA record has started at Selfridges in London. The famous store, located near to our King’s Cross car hire branch, is selling some of 100 legs of the specially bred ham that are produced annually for close to £1800 each.

The ham comes from pigs that are specially reared near to Extremadura in the southwest of Spain, where they are looked after by Manuel Maldonado and a team of swineherds. Given a free range of the semi-wild environment around them the swine feed on the wild roots and grasses nearby, as well as acorns that have fallen from the surrounding oaks which gives the pork it’s renowned sweetness, flavour and texture.

Before the pigs are slaughtered their genetic purity is tested at Cordoba University, only pigs that are found to be 90% pure Iberico (the breed used) are given the stamp of approval, compared to the regular standard of 70% allowed for Jamon Iberico. After Señor Maldonado has chosen 50 of the best pigs for slaughter from the herd they are then taken for salting and curing for over 2 years, more than double the normal the regular time, to give them their unique taste. The cured ham is then presented in a hand crafted box and wrapped in an apron made by spanish tailors.
